PauPau Banana Pancakes

A pancake is a thin and round cake from a batter, and mostly cooked on a frying pan. Pancakes may served with variety of toppings like jam, fruits, syrup, meats and much more. 

But, today I am going to make the banana pancakes in a different method. I am still using the same pancakes batter, but i will using the baking cake method, which is oven it instead of pan-frying. Well, surprisingly, the outcome was quite nice. Crispy outer skins and fluffy inside. 

2 cups buttermilk
2 eggs
1 cup all purpose flour
1 cup mashed banana
1/2 cup thinly sliced banana
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon melted butter
Sunflower seeds

Sift together flour, baking powder and salt in a large bowl.
Whisk together buttermilk and eggs until evenly blended in a separate bowl.
Then, make a well in the center of the wet ingredient and slowly stir in the buttermilk mixture and mashed banana.
Stir until the flour disappear, but being careful not to over mix the batter.
Preheat oven at 200C. Add melted butter evenly all over the aluminium foil paper in the tray.
Pour in the batter on the tray and add on sliced banana and sunflower seeds. (optional: you may add others nuts as well)
Oven it until browned.
Cut in and served it while hot.
