PauPau Old Cucumber with Pork Ribs Soup

Pork ribs are very common used for simmering soup than just the meat. As the ribs can bring out much richer flavor to the pork soup. Today I am going to share with you "Old Cucumber with Pork Ribs Soup".

5 ~ 6 pork ribs
6 red dates (seedless)
1 old cucumber (with skin)
2 carrot
1 pack grey oyster mushroom (or other mushrooms)
Fish balls
Himalaya salt (to taste)

Ingredients: (for the meatballs)
Minced pork
Shitake mushroom (diced)
Shredded carrot
Crabmeat sticks (sliced)
Soy sauce (to taste)
1 small egg
2 teaspoon sesame oil

Directions: (for the meatball)
Mix well all the meatball ingredients and marinated for at least 30mins. 
Spoon it and make into a round meatball shape.

Add pork ribs and red dates into boiling water at high heat for about 10mins.
Add old cucumber and carrot into the soup and continue simmer at lower heat for 1hour.
Add grey oyster mushroom and simmers until tender.
Add meatballs and fish balls and continue simmer until the meatballs is cooked.
Add salt to taste.
Served hot.
