PauPau Winter Melon with Pork Ribs Soup

I love to use pork ribs for simmering soup than chicken bones as it is much more cleaner. As chicken bones have lots of oily part need to remove. Besides, the ribs can bring out much richer flavor to the soup. Today I am going to share with you "Winter Melon with Pork Ribs Soup".

5 ~ 6 pork ribs

Winter Melon (cubes)
2 Carrot 
Shitake Mushroom (sliced)
6 red dates
Fish balls

Add pork ribs and red dates into boiling water at high heat for about 10mins.
Add winter melon and carrot into the soup and continue simmer at lower heat for 1hour.
Add shitake mushroom and simmers until tender.

Add fish balls and continue simmer for 3mins or until the meatballs is cooked.
Add enoki mushroom and cook for 30 seconds. Close fire.
Add salt to taste.
Served hot.
