PauPau Creamy Wild Mushroom Soup

Creamy Mushroom Soup is an easy type of soup where the basic flour mixture with milk or cream, and then mushroom broth or mushroom are added. My preferences for mushroom soup are thick and creamy type. Today I am going to cook "PauPau Creamy Wild Mushroom Soup". Hope that you might like this recipe too!

400gm grey oyster mushroom
250gm shitake mushroom
1 onion
1 garlic

40gm butter
40gm plain flour
2 cubes Knorr chicken stock (with 1Ltr water)
100gm full cream milk
3 teaspoons dried parsley
Himalaya salt (to taste)

Bread (small dice)
Garlic Butter 

Melt butter in a hot wok or saucepan. Pour in the blended onion and garlic and stir fry until golden brown.
Blend all the grey oyster mushroom and Shitake mushroom into puree. (Reserved some Shitake mushroom and sliced it) Add the mushroom puree and stir it well for at least 5minutes.
Add sliced Shitake mushroom and stir it well.
Sprinkle flour over and mix well.

Add in chicken stock gradually and stir it constantly until the mixture thickens. Add salt or pepper. (to taste)
Blend soup until smooth and bring to the boil. Add in milk and stir it well.
Remove from heat and sprinkle parsley.
Stir it constantly until the soup become blend and creamy.

Served it with croutons.
