PauPau Minestrone Soup

Minestrone Soup, "the big soup", a thick Italian soup with vegetables likes tomato, onion, celery, beans and carrot. Today I am going to share with you "PauPau Minestrone Soup". 

1 medium onion (chopped finely)
300gm grey oyster mushroom (chopped finely)
4 potato (bring to boiled until medium soft, then peeled and cut into small cube.)
1kg tomato (blended into puree)
1 can tomato puree
3 larges tomato (cut into small cube)
4 stalks celery (chopped finely)
250ml full cream milk
5 tablespoon all purpose flour
1 tablespoon dried parsley
1 teaspoon dried thyme
3 ~ 4 bay leaves
2 sliced bacon

Melted butter in a hot wok and stir fry the bacon until golden crispy.
Put aside in bowl.

Melted butter in a hot wok and stir fry the onion until golden brown.
Add tomato and stir it well.
Add mushroom and continue stir fry until tender.
Add parsley and stir it well.

Add dried thyme in the hot wok.
Add bay leaves and stir fry.
Add the blended tomato and simmer for at least 10minutes.
Sprinkle the flour all over the soup and stir it well.

Add in tomato puree (canned).
Add chicken stock and continue to stir well.
Add celery and potato into the soup.
Simmer for at least 30minutes. Add milk and stir well.
Add crispy bacon and served it hot.
