Skinless chicken (well marinated with soy sauce, 1 teaspoon pepper, 1 teaspoon sesame oil & 1/2 teaspoon sugar)
1 tablespoon dark soy sauce
1 tablespoon soy sauce
1 teaspoon "Gao Liang" Chinese wine (optional)
1/4 cup chicken stock / water
1 tablespoon oil (for stir fry)
Heat the oil in the wok. Stir fry the minced onion until brown.
Add in the marinated chicken and cook for 10mins. Add in carrot and mushroom.
Add the chicken stock / water when the wok is dry. Add soy sauce and dark soy sauce and continue to simmer the chicken until tender.
Add Chinese wine and Enoki mushroom into the wok. Continue to stir fry for 2mins.
Served hot with rice.
