PauPau Fried Oyster Omelette (Oh Chien)

There are quite variety choices of fried oyster omelette (Oh Chien) in Penang and the most common ones are the sticky base and the crispy base. Today I am going to cook the crispy base "PauPau Oyster Omelette", hope that you will enjoy this recipe too!

Ingredients: (Batter - Mix well)
2 tablespoon tapioca flour
50ml water
1/2 teaspoon salt (or to taste)

2 eggs
250gm oyster (cleaned and drained)
Cooking oil
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon pepper powder
Fresh parsley (chopped finely)

Heat the cooking oil in a pan. Spread the batter into a thinly layer. Add in egg and stir well for about 30seconds. Add some parsley.
Continue fry the omelette until golden brown.
Flip over the fry the other side until crispy and set aside on a plate.
Heat cooking oil in the pan and add oyster.
Add fish sauce, soy sauce and pepper powder and stir well for about 30seconds.
Place the oyster on top of the omelette and garnish with some fresh parsley.
