PauPau Broccoli and Potato Soup

Today I am going to share with you "PauPau Broccoli and Potato Soup", which is full of vegetables chunks and mild hint of spices in my recipe. Hope you will enjoy it!

2 large onion
1 clove garlic
2 tablespoon olive oil
Carrot (peeled and shredded)
Potato (peeled and shredded)
1 teaspoon paprika powder
1 teaspoon nutmeg powder
Broccoli (rinsed and cut into small floret)
300g lean meat (cubed, or you may substitute it with chicken or vegetables stock cube)
1500ml water
100ml milk
1 sliced cheddar cheese
Salt (to taste)
Pinch of black pepper powder

Heat up olive oil and stir fry chopped onion until golden brown.
Add in chopped garlic and stir fry until golden brown too.
Add in shredded carrot and potato and stir fry until tender. (add some water if the wok is too dry)
Add paprika powder and stir it well.

Add in nutmeg powder and stir well.
Add in water and meat, then boil the soup with high heat until the meat is cooked. Continue to simmer the soup at low heat for at least 1 hour or until the meat is tender.
Add in the broccoli florets and cook until the broccoli is tender. Turn off the heat.
Add in milk and cheddar cheese, then stir well.

Pour the soup into a nice bowl and then sprinkle the black pepper powder on top of it.
