PauPau Lotus Root Soup with Peanut

Lotus root is actually under one of the low calorie root vegetables. For example, 100g of lotus roots only provides for about 75 calories. Besides, lotus root is also rich in fiber which helps to eliminate the blood cholesterol, sugar, constipation problem and body weight.

Today I am going to share with you "PauPau Lotus Root Soup with Peanut" recipe. Hope that you will like it as well.

250g ~ 300g lean meat (cut into small cubed)
10 ~ 20 red dates
1 large honey date
500g lotus root (peeled and cut into thin sliced)
1 large carrot (peeled and cut into small chunks)
100g raw peanuts
200g oyster mushroom
Salt (to taste)

Fill the pot with water and bring to boil together with red dates. Add in lean meat when the water is boiling. Then, continue to boil with high heat for about 30minutes.
Add in lotus root and raw peanuts. Continue to simmer at medium heat for about 30minutes.
Add in carrot and continue to simmer in low heat for about 30minutes.

Add in oyster mushroom and continue simmer until the mushroom become tender.
You may continue to simmer at lower heat for about 1hour or until the lean meat become tender.
Close the heat and add in salt (to taste). Stir well.
