PauPau Satay Chicken

Chicken Satay is the popular dishes for the local and it is a skewer of either chicken, lamb or beef served with peanut sauce, ketupat (rice cube) and cucumber. And today I am going to cook stir fry satay chicken with green capsicum, hope that you will enjoy my recipe "Satay Chicken".

Ingredients: (to marinate)
Chicken breast meat (thinly sliced. Optional: You may use chicken thigh fillet.)
2 teaspoons turmeric powder
3 tablespoon curry powder
1 ~ 2 tablespoon soy sauce (to taste)
2 teaspoon Worcestershire sauce
1 teaspoon coriander powder
1 tablespoon chili powder

Onion (finely chopped)
Garlic (finely chopped)
Lemongrass (finely chopped)
Capsicum (thin sliced. Optional: Any color will do.)
Almond flakes (Optional: Peanuts.)
Olive oil
1/2 teaspoon salt (to taste)

Ingredients: (for deco)
Japanese cucumber
Romaine lettuce

Marinated the chicken and place into fridge for at least 30 minutes. (Optional: It is best to marinate the chicken overnight.)
Heat up the olive oil and fry the onion, garlic and lemongrass until fragrant.
Add the marinated chicken and stir fry for about 1 ~ 2 minutes.
Add almond flakes and continue to stir fry for about 1 minutes.
Add some water and simmer the chicken for about 20 minutes or until tender.
Add capsicum and stir fry for about 30 seconds.
Add salt and stir fry well.
