PauPau Sambal Dried Shrimp

Sambal Dried Shrimp is one of my favorite dish, and I could have just the sambal dried shrimp with steamed rice. Besides, you could use sambal dried shrimp to fried rice or add it into some vegetables dishes like eggplant or okra.



Ingredients: (To blend)
3 stalks lemongrass
400gm shallots (peeled, chopped)
1 clove garlic (peeled, chopped)
1 turmeric
10 red chilies (Unseeded)
10 dried chilies (soak)


Ingredients:
500gm dried shrimp (soaked, cleaned, and pound until fine)



10 kaffir lime leaves (Chopped finely)
2 tablespoon tamarind paste (mix with water and strain to get the juice)
1 piece belacan
1 tablespoon brown sugar



Directions:
Add in lemongrass first, follow by shallots, garlic, turmeric, chilies, add some water and then blend in the blender or food processor. Blend until you get the smooth paste.
Heat the olive oil. Pour in all the blend paste and belacan.
Stir it until the blend become thick.
Add in tamarind juice.
Continue to stir it under low heat.


Add in the pound dried shrimp.
Stir well.
Add in kaffir leaves and continue to stir until it is fragrant.
Store in container when it is cool, you can even freeze it for later use.
