120gm all purpose flour
6 tablespoons soy milk powder
3 ripe mango (blend into mango puree)
1 1/2 teaspoon baking powder
2 egg white
1 egg yolk
Pinch of salt
Peeled and cut the mango into small cubes. Add mango cubes and some milk into blender and blend until smooth puree.
Sift the flour in a big bowl.
Add egg white and egg yolks in the middle of the flour. Stir well the egg and then mix well with the flour.
Add in soy milk powder, baking powder, oatbran, pinch of salt, milk and mango puree in the bowl. (reserve half of the mango puree for use later.)
Mix well all the ingredients.
Heat up with pan and flip over when the mixture is no longer runny. It is done when both side of the pancake become golden brown.
