PauPau Potato Cake

Potato Cake is definitely great for breakfast or appetizer as well. And today I am going to mix up some vegetables, corn, onion, prawn and potato, of course add some cheese inside and then grill a cheesy potato cake.



Ingredients:
1 fresh corn
150gm ~ 200gm red cabbage (finely sliced)
2 carrot (finely sliced)
2 large potato (steam and mashed)
2 large onion (finely sliced)
1 large egg
2 ~ 3 tablespoon corn flour
3 ~ 5 tablespoon light soy sauce (to taste)
Sliced cheese
2 tablespoon black pepper powder
1 tablespoon oil
Bread crumbs (optional: if you prefer a more crispier potato cake.)


Ingredients: (to marinate)
300gm prawn (diced)
2 tablespoon light soy sauce
1/2 teaspoon brown sugar
1/2 teaspoon baking soda

Before marinate, mix well baking soda with the prawn and then rinse off. Repeat this steps for 2 times.
Drain the excess water and then pat dry the prawn.
Add the light soy sauce, brown sugar and baking soda, mix well and keep in fridge for at least 30minutes.


Directions:
Mix well all the ingredients and marinated prawn in the bowl.
Make a hole in the middle, and then add beaten egg in the middle.
Stir the beaten egg in clockwise from inner to outward.


Add corn flour and mix well.
If you wish to add bread crumbs, then you can add it too and mix well. But I did not add bread crumbs this time as my bread crumbs are out of stock.


Now I am using my new kitchen equipment - the love shape mold for making this potato cake. Add 1/3 of potato mixture into the mold, then add some cheese and add the potato mixture to cover the cheese. 


Heat up pan with oil. Grill the potato mixture in slow heat for about 3 ~ 5 minutes (depends on the potato thickness) or until golden brown. Flip over and continues grill until golden brown.
