PauPau Papaya Chicken Soup

Papaya (angels of fruits), is rich in papain which is an enzyme that helps digest protein. This enzyme is more concentrated when the papaya is unripe. Thus, it is better to have a unripe papaya when boiling papaya chicken soup.

Obviously the papaya that I am going to use is consider ripe, however the soup is taste naturally sweet and nourishing.

1/2 papaya (peeled, unseeded and cut into smaller pieces.)
1 whole skinless chicken; cut into 4 pieces (I am using Kampung Chicken)
6 ~ 8 red date (unseeded)
Pinch of salt 

Fill in filtered water into cooking pot until half full and bring to boil.
Add chicken into the boiling water with open lid. Keep boiling for about 10 minutes.
Keep boiling the soup with low heat for at least 2 hours, with close lid.
Add in cut papaya into the soup and continue to boil it for about 10 ~ 20 minutes or until the papaya is soft.
Served hot.
