1 onion (peeled and diced)
1 garlic (diced)
1 red pepper (unseeded and diced)
1 jalapeno (unseeded and diced)
1 teaspoon of cayenne powder
1 tablespoon parsley
Pinch of cumin powder
Pinch of salt
Ingredients for Mango Salsa:
1 ripe mango (peeled and diced)
1/2 lemon juice
Brush both side of salmon with some salt.
Heat up the pan with olive oil. Grill the salmon for about 6 minutes each side or until golden brown. (depend on your desired, grill it shorter for a more juicy salmon or grill it longer for a more crispy salmon.)
Set aside the grill salmon.
Add olive oil and stir in the onion until tender. Follow by garlic, stir the garlic until golden brown.
Add in cayenne powder, parsley and cumin powder, stir well.
Turn off the heat. Add in red pepper and jalapeno, stir well.
Place the mixture into a bowl and add in mango cube and lemon juice.
Served the mango salsa with the grilled salmon.
